Food Service and Hospitality

As California emerges from the recession, the Food Service and Hospitality industry will rise as California's career field of the future. Better personal finance means more people will spend their money on leisure activities such as dining out and traveling, and the state's tremendous tourist lure will continue to spur job growth in the food service and hospitality industry. Exciting shifts in the field, such as increased use of technology appeals to international markets, "gourmet" and "regional" specialization in restaurants, and marketing/promotion, make Food Service and Hospitality a top career choice for the 90s.

Students pursuing the Food Service and Hospitality career path program study:

• Food service and hospitality industry awareness, including its role in the state's economic development;
• Safety regulations, operational and emergency procedures;
• Nutrition;, Sanitation and food handling;
• Newest technology in food preparation and service;
• Customer relations;
• Entrepreneurship;
• Cost and profitability analysis;
• Standardized recipes and measurements.
  

Students also learn employment and management skills for careers in food and beverage services; and food and beverage production and preparation. Occupation-specific curriculum includes tasks involved in operating a catering business; basic baking techniques; food preparation in institutional and /or professional kitchens; side work and customer orders; and cash and credit transactions.

Food Service and Hospitality jobs have unlimited potential. Almost all food service jobs, including food preparation workers and servers, cooks, and chefs are among the occupations expected to experience the largest growth in the state through the year 2005. As with other fields, food service and hospitality occupations with special emphasis on the elderly will grow at a faster rate than the average, reflecting the increased savvy and dependence on research and marketing.
